Soy Sauce Noodles

About this Recipe

Now that we are living in a camper full-time, the option for take-out is basically nonexistent. We can’t exactly order delivery and our favorite Asian noodle place now resides about a good half-hour away. So, we decided to create our own simple and easy, yet oh-so-delicious recipe when we’re craving some Asian cuisine. A quick dish that we named Soy Sauce Noodles because that’s essentially the bulk of it. We hope you love this saucy recipe as much as we do!

Ingredients

For the Sauce:

  • 1/2 cup, low sodium soy sauce
  • 1 /8 cup, dark soy sauce (we used a mushroom dark soy sauce)
  • 1/2 tsp, sesame oil
  • 1/4 cup, brown sugar, lightly packed
  • 1/2 tsp, ginger
  • garlic powder
  • pepper 
  • red pepper flakes (optional)

You will also need:

  • 1 package, Stir-Fry Noodles (ours came with about 14 oz of noodles)
  • 1 yellow onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 3-4 large cloves garlic, thinly sliced or minced
  • 8 oz mushrooms, sliced (optional)
  • 1/2 zucchini, cut into bite size pieces (optional)
  • Green onion, sliced

Our Tips:

  • Not necessary, but HIGHLY recommend, to use the easy Heat and Serve noodles. We used KAME Thai Ribbon Stir-Fry Noodles and just let them finish “cooking” in the sauce. Super easy.
  • Add-ins. Add-ins. Add-ins. We love adding lots of different veggies and protein to this dish to make it different ever time. This time we just added mushrooms and zucchini, but you can add chicken, shrimp, beef, cabbage, edamame, string beans, peppers. The options are endless. 
  • If you find the dish a little too salty for your taste, simply add more brown sugar or even honey to the sauce.
  • Of course, add in chili flakes or siracha for extra kick.
  • Try different types of noodles.
  • This is a wild one…but add a tablespoon of peanut butter to create a “pad thai” (ish) dish. Definitely a preferred preference on this one, but it’s good!
  • Great for leftovers! 

Step by Step Instructions

Step 1

If you’re using dry noodles, cook them according to the package instructions.

In a pan over medium heat, add 1 tbsp oil, peppers and onions.

 Step 2

After your onions begin to go translucent, add in your garlic. 

Note: 

Because of preference and dietary restrictions, I cook my peppers and onions longer until they are softer and more “caramalized.” If you like you’re with a little more bite, cook for less time. 

Add any additional veggies and cook until desired texture of veg.

Step 3

Remove veggies from pan.

In a separate container combine your soy sauce, dark soy sauce, sesame oil, brown sugar, and  ginger. Add garlic powder, pepper, and red pepper flakes to taste. Stir until well combined. 

 Step 4

Add sauce mixture to your empty pan and cook on low to medium heat until it begins to bubble and thicken.

Step 5

Add your noodles to your pan along with your veggies. 

Stir until well combined and cook for an additional 3-5 minutes.

Step 6

Top with green onions and serve hot.
