About this Recipe
Carbonara is one of those pasta recipes that seems intimidating at first, but once you get the hang of it, it’s one of the easiest and quickest ways to make a delicious meal. Traditional carbonara uses cheeses like pecorino romano, cured pork like pancetta and spaghetti, but we never seem to have any of those ingredients on hand. So here is our own version of a carbonara using bacon, good old parmesan and whatever pasta we had in the pantry. Creamy, rich and so so good. We hope you enjoy!
Ingredients
- 3 egg yolks
- 1 egg, whole
- 1/2-1 cup, grated parmesan
- 4-6 strips bacon, diced
- black pepper
- pasta of choice
Our Tips:
- We used bacon in our recipe because that’s what we usually have on hand, but for a more traditional carbonara, use pancetta.
- Try pecorino cheese instead of parmesan.
- Add some red pepper flakes for spice.
- Want some extra protein? Throw on some grilled chicken.
- Need some greens? Add in spinach.
Step by Step Instructions
Step 1
Cook pasta per package instructions.
Step 2
While pasta is cooking, add egg yolks, whole egg, parmesan, and lots of black pepper to a small bowl.
Mix until smooth.
Step 3
Slowly, add a little bit of pasta water to your egg/parmesan mixture. Do only a few spoonfuls at a time, all while gently stirring.
You’re wanting to get your egg/parmesan mixture to at least room temperature. This way your eggs won’t scramble when you add it to your pasta.
Step 4
In a separate pan, cook your bacon until crispy.
Step 5
Once your bacon is crispy, turn off heat.
Add your cooked and drained pasta to pan and stir.
Step 6
Add your egg/parmesan mixture on top and gently mix.
The key is to make sure your pan is still hot enough to turn the mixture into a creamy sauce, but not hot enough to scramble your eggs.
Step 7
Once your pasta has created a smooth and creamy sauce, you’re ready to plate.
Top with extra parmesan and black pepper and enjoy!
