One Pot Mushroom Pasta with Bacon

About this Recipe

In our household, we love pasta and we love mushrooms. We might love bacon even more. That’s why this One Pot Mushroom Pasta with Bacon recipe is one of our comfort staples for a delicious dinner. A beautiful pasta with flavorful, rich mushrooms and crispy bacon all mixed together in a savory, creamy sauce. So good.

Ingredients

  • 1 shallot, minced
  • 6-8 strips bacon, cut into thin slices
  • 1 tbsp, butter
  • 3 cloves garlic,  minced
  • 16 oz mushrooms, sliced
  • 8 oz heavy whipping cream
  • 16 oz pasta of choice
  • 2 cups water or broth
  • Parmesan cheese
  • Salt and Pepper to taste
  • (optional) 1 bell pepper, diced

Our Tips:

  • Add chicken for extra protein.
  • Feel free to add any additional veggies too. I added a green bell pepper in this one, but you could add spinach, asparagus, etc.
  • If you want some spice in your life, add cajun seasoning or red chili flakes for some added heat.
  • We don’t have an oven, but if you do, you could add this pasta to a baking dish, sprinkle some extra cheese and broil until the top is golden and crispy. Yum!
  • If you don’t have shallots, that’s okay, just substitute with half a yellow onion, finely chopped.
  • Once your mushrooms are cooked and before you add your pasta, add a splash of white wine into your pan and simmer until most of the liquid is evaporated. So much flavor!
  • Add more bacon because…bacon.

Step by Step Instructions

Step 1

Cook bacon until crispy.

Remove bacon from pan, reserving about 1 tbsp of bacon grease.

Step 2

Add butter, garlic and shallots to pan with your reserved bacon grease.

Cook over medium heat until tender and fragrant.

Add bell pepper, if using, and cook until tender.

Step 3

Next, add your mushrooms and cook on medium high heat until all moisture is gone.

(Extra Tip:
If you have some, add a splash of soy sauce or a dark soy sauce to your pan. I used a dark mushroom soy sauce and it added so much flavor to my mushrooms.)

Step 4

Add your pasta into your pan and mix well with other ingredients. 

Slowly add in 1 1/2 -2 cups of water (or broth). The liquid should just barely cover your pasta. 

Bring to a simmer and cook until pasta is almost al dente and most of the liquid is gone, stirring occasionally. 

Step 5

Add in heavy whipping cream and gently mix. Continue to cook on low to medium heat.

Once your pasta is cooked, add as much parmesan cheese as your heart desires and gently mix until your sauce becomes smooth and creamy.

This is where you can also add in any additional seasonings. I usually add a little bit of Cajun seasoning and paprika. 

Note: If your pasta “sauce” isn’t as creamy as you like, just add in a little more heavy whipping cream and season to taste.

Step 6

Add your bacon back in and mix together.

Salt and pepper to taste.

Garnish with extra parmesan cheese and parsley.
